Healthy pancakes made with rolled oats and bananas.

125ml oat milk, 2 eggs, separated, 1 small banana, 100g rolled oats, 2 tsp baking powder, few drops of vanilla extractoil, we used avocado oil spraylow-fat yogurt and fruit to top
Blend the egg yolks, banana, oats, baking powder, and vanilla in a mixer until the mixture is as smooth as you can make it. The egg whites should be whipped until firm peaks form. Add 1-2 tablespoons of the egg whites to the batter and fold in the remaining whites.
Cook for 1-2 minutes, until the base sets and bubbles, appear all over the top, in a non-stick pan sprayed with oil. After a minute, flip it over. Ensure the top is dry before flipping, or the center may collapse.
